Featured Recipe: Super Seeds

Super Seeds

2 c raw pumpkin or sunflower seeds, or a mixture of both
3 T soy sauce
2 t honey
curry powder or cayenne pepper to taste {optional}

Stir together soy sauce and honey {and spices, if using} in a small dish. Toast seeds in a large non-stick skillet on medium high heat, stirring constantly. Toast seeds for 4-5 minutes or until fragrant and lightly browned. Carefully turn out seeds into a heat-proof bowl and add soy sauce mixture. Watch out for steam! Stir seeds with a long-handled, heat-proof spoon or spatula to coat evenly. Return to skillet and heat. Stir and turn lightly until dry – this should take just a minute or less. Be careful not to burn seeds. Seeds will be slightly shiny. Turn out seeds onto a heat-proof plate or dish and serve when cool. Store in an airtight container.
