Green Eggs and Ham (submitted by Cecilia Baltzelle)
Ingredients: 1 lb sliced or chopped ham 1 c chopped kale or spinach leaves 4 large eggs Salt and pepper (optional) 1 T butter for cooking
Wash kale or spinach and pat dry with paper towels. Place in a blender and add eggs. Blend on high for a minute or until the veggies are well pureed. Melt butter in a skillet over medium high heat and add egg mixture. Cook until done and serve with heated ham.
Note: you may also add the ham to the pureed mixture instead of serving it separately.
